These little sliders were so fun and easy to make and not to mention SO delicious 🤤 I love these because they use very simple ingredients around the kitchen to make mini burgers.

- preheat oven to 400°F - cut the sweet potato into coins and add to a large baking sheet, drizzle with olive oil and salt on both sides - bake for 40 minutes, flipping halfway - meanwhile, add the beef to a large bowl with the seasonings and mix to combine - form small patties and flatten in the center - on a skillet or cast iron skillet over medium heat, add oil and cook for 3-5 minutes each side - to assemble the sliders, start with one sweet potato coin, add mustard or other condiments, then the burger patty, then the lettuce, tomato and onion then top with another sweet potato coin
