Preheat oven to 350°F. In a bowl, crack the eggs and add the milk, salt and pepper and whisk. Add a 8-10” skillet to a burner over medium heat with a bit of olive oil. Add the grape tomatoes and cook for 2-3 minutes until slightly softened. Add in the chopped spinach and mix, before it gets a chance to wilt, pour in the egg mixture. Crumble feta on top and bake in the oven for 15-20 minutes until the eggs have set. Cut into pieces and enjoy.
