This SWEET POTATO SKILLET is one of my favorite throw together type meals ๐ณ It only really requires 4 main ingredients and some spices, thatโs it! ๐๐ป I made this one plant based with the black beans but feel free to use other protein like chicken sausage too. I enjoyed this for breakfast but it honestly makes the best kind of meal any time of the day! Happy Tuesday my friends! ๐

Rinse sweet potatoes well and cut into cubes. Dice the onion and bell pepper. In a cast iron or regular skillet over low-medium heat, add olive oil and the sweet potato and cook for 10 minutes while stirring in between. Add the onion and bell pepper and stir. Rinse and drain a can of black beans, add half to a bowl and add the spices (cumin, chili powder, garlic powder, salt and pepper). Add the seasoned black beans to the skillet and stir again. Dice avocado on top and serve with cilantro.
