Rinse sushi rice well and add to a pot with about 1 cup water, let sit for about 30 minutes. Bring rice to a boil, cover, let simmer for 20 minutes. Meanwhile, defrost shrimp in a bowl of cold water for 10-15 minutes, remove shells, and devein. Add shrimp to a skillet over low-medium heat with olive oil and some garlic powder, cook on each side for 2-3 minutes. Cut shrimp down the middle and also cut the carrot, cucumber and avocado into thin slices. Add nori to a sushi mat (or parchment paper) then add your rice 3/4ths of the way high. Add your fillings towards the bottom, roll up and wet the empty space of nori with water to help seal the roll. Cut into 8-10 pieces, top with sesame seeds and serve with soy sauce.
