A quick and delicious stuffed sweet potato recipe featuring buffalo chicken and ranch dressing, perfect for lunch. It's an easy, no-bake meal using the microwave.

Wash the sweet potato well, poke holes in it with a fork, cover with a damp paper towel, and microwave for 5-7 minutes depending on its size. Once cooked, cut the sweet potato down the middle and mash the inside with a fork. In a bowl, shred the chicken and add a couple tablespoons or desired amount of buffalo sauce, then add this mixture to the sweet potato. Drizzle ranch dressing on top and garnish with sliced scallions.
