These STRAWBERRY CRUMBLE BARS make for the best summer dessert! They look intimidating but are SO easy, with the crust and topping made from the same ingredients. This recipe is vegan, gluten-free, and uses only 8 ingredients.

Preheat oven to 350°F. In a large bowl, combine quick oats, oat flour, and baking powder, then mix. Add the melted coconut oil and maple syrup and mix again. In a separate bowl, combine diced strawberries, coconut sugar, and a pinch of lemon juice. Mash the strawberry mixture, then add it to a strainer over a bowl and let the juice strain. Add a bit of coconut oil to an 8x8 baking dish, then line with parchment paper. Add 3/4ths of the crust batter and press down into the prepared dish. Add the strawberry mixture to the middle. Top with the remaining 1/4 of the crust crumbles. Bake for 30-35 minutes until golden brown. Once cooled, cut into 9 squares and enjoy.
