MEDITERRANEAN QUINOA SALAD

This is such a great side to have alongside lunch, dinner, or make for a (socially distanced) barbecue.

Rinse quinoa well and add to a pot with 4 cups of water, add salt and bring to a boil. Bring quinoa down to a simmer, cover, and cook for 10-15 minutes or until the water has absorbed. Meanwhile, dice cucumber, tomatoes, red onion and cut olives in half. Let quinoa cool, toss vegetables in along with crumbles of feta. Serve with a source of protein or have it over a salad.
