Easy Canned Chickpea Falafels

My latest obsession is FALAFELS 🧆🥙 They’re a great source of plant based protein and are packed with flavor 😛 I always order them out so I decided to make my own! 🌱 Traditionally, dry chickpeas are used and soaked overnight but we don’t have time for that so I just used canned chickpeas and they came out amazing! They’re also typically deep fried but I just shallow fried them in a pan to use less oil 🙌🏻

Rinse and drain can of chickpeas and dry them WELL, you want to remove as much moisture as you can. In a food processor or blender, combine chickpeas, onion, parsley, cilantro, garlic, spices and combine until mixed. Add the flour in a food processor or transfer to a bowl and mix until combined. Refrigerate the "dough" for at least 30 minutes, the longer the better. Add avocado oil to a skillet over medium-high heat, form 2 TBS size falafel patties and fry on each side for 2-3 minutes until golden brown. Serve over rice, greens or in a pita along with feta, cucumber, tomato, pickled onions, and tahini.
