- in a large sauté pan or sauce pan (I use my @careaway pans) over medium heat, heat the olive oil then add the Thai green curry paste and cook for 1-2 minutes stirring in between - add the water and the coconut milk, let it come to a boil, then add the shrimp and cook for 2-3 minutes - pour in the fish sauce, coconut sugar, salt and vegetables and bring the heat down to a simmer for at least 5 minutes until the vegetables are slightly tender - serve alongside white rice and top with cilantro
