These sweet potato wedges are caramelized yet soft on the inside, just like the ones from Dig Inn. This recipe is a scaled-down and slightly tweaked version of their original, tasting just like the real deal.

Preheat oven to 425°F. Wash and dry sweet potatoes. Cut in half lengthwise and then into large wedges. In a bowl, add the olive oil, seasonings, water and mix. Mix marinade with the wedges and add to a parchment lined baking sheet. Bake for 30-40 minutes flipping halfway and until they are browned yet can be pierced by a fork. Optional: add a sprinkle more of sea salt for serving.
