Making the Monday after a holiday weekend a little bit easier! This meal prep was beyond easy because it just involves cutting up some ingredients & throwing them on a pan. Plus, it’s super versatile too! Serve with greens, rice, quinoa, or on its own.

Preheat oven to 400°F. Chop up bell pepper, onion, & cut broccoli in half. Cut sausage links into “coins”. Drizzle olive oil on a baking sheet, add all ingredients, top with a pinch more olive oil, salt, pepper, & seasoning. Cook for 20-25 minutes, flipping halfway.
