- dice onion and cut sweet potato into small cubes, we want them to be small to they cook fast and even - heat olive oil in a sauté pan over medium heat - add onion, garlic and ginger and mix, cook for a couple minutes - add the can of tomatoes, coconut milk, chickpeas and cubed sweet potato - bring to a boil, then reduce to a simmer and cook for 20-25 minutes or until the sweet potatoes are soft and fork tender - add cumin, turmeric, curry powder, red pepper flakes and mix, then add spinach until wilted - add salt and pepper to taste and mix - serve over rice, optional stir in some juice from the lime for a brighter flavor
