Swap a boring rice cake for this PB&J RICE CAKE 🥜 I’ve seen loads of people covering their rice cake with peanut butter and chocolate so I added raspberries to make a fun twist! This makes for a great snack or dessert idea. Plus it only requires about 4 main ingredients & is ready in no time 🙌

Spread a thin layer of peanut butter on a rice cake. Add raspberries on top and smash with the back of a fork. Pour chocolate chips in a bowl and microwave for increments of 15 seconds stirring in between until melted—add a pinch of coconut oil here to help with melting. Pour chocolate over the rice cake, twist the rice cake to let the chocolate cover the top or use the back of a spoon. Sprinkle sea salt and freeze for 10-15 minutes. Break in half and enjoy.
