A homemade version of the viral TikTok salmon bowl, putting a spin on @emilymariko’s deconstructed sushi bowl using fresh ingredients rather than leftovers. This recipe uses coconut aminos and vegan avocado oil mayo for a delicious twist.

1. Rinse 1 cup of rice and add to a pot with 2 cups of water and salt. Bring to a boil, then cover with a lid and bring down to a simmer for 15-20 minutes. 2. Preheat oven to 400°F. 3. Add a fresh piece of salmon to a baking sheet lined with olive oil. Add additional olive oil to the salmon and season with salt, pepper, and garlic powder. 4. Bake the salmon for 15-18 minutes. 5. In a bowl, combine 1 1/2 cups of cooked rice and the baked salmon. Add coconut aminos (or soy sauce), mayo, and sriracha, then mash with a fork. 6. To the side of the salmon and rice mixture, add 1/2 of an avocado sliced, along with kimchi, sesame seeds, scallions, and seaweed snacks. 7. To enjoy, grab a piece of avocado and the salmon rice mixture with the seaweed snacks.
