Matcha is such a great source of antioxidants 🙌🏻 These make for such a great breakfast or afternoon pick me up as they have a slight hint of caffeine in them. Preheat oven to 375°F. In a large bowl, mix the dry ingredients: flour, matcha powder, sugar, baking powder and salt. In a separate bowl, mix the wet ingredients: eggs, milk, vanilla and coconut oil. Mix the wet with the dry ingredients making sure not to over mix. Line a muffin tin and add a scoop of batter into each liner. Bake for 15-17 minutes until a toothpick comes out clean.
