Preheat oven to 400°F and rinse potatoes well then dry. Place each potato between two wooden spoons or chopsticks and cut down the entire potato, this prevents the knife from going through to the bottom. Place on a lined baking sheet with parchment paper, drizzle with olive oil, salt & pepper & cook for 30 minutes. Mix garlic & butter in a bowl, then brush mixture on potatoes, making sure to coat them well, then top with parmesan. Cook potatoes for an additional 35 minutes & top with parsley.
