Growing up Puerto Rican I was exposed to SO many amazing dishes šš¼ But many tasty meals tend to be fried and greasy which isnāt the best to have on the daily š Instead of compromising on the delish Spanish flair, I incorporated in this quinoa meal prep!

ā¢chop up white onion and bell peppers ā¢in a large saucepan, sautĆ© onion + minced garlic in olive oil over medium heat until translucent, then add the bell peppers and jalapeƱo to sautĆ© ā¢add corn, rinsed beans, and canned tomato to the pan ā¢add quinoa and 1 cup water along with bullon and sazón ā¢bring to a boil for a minute or two then simmer and cover for 35-40 minutes
