Taco Stuffed Sweet Potatoes

Putting a spin on #tacotuesday with these TACO STUFFED SWEET POTATOES! This easy dinner idea is vegan and so good. Instead of baking, the sweet potatoes are microwaved for just 7 minutes, saving significant time. If you’re craving taco meat you can definitely add that in too!

Wash the sweet potato well and dry. Using a fork, poke holes in the sweet potato, wrap in a paper towel, and microwave for 5-7 minutes depending on the size of the sweet potato. Caution: use an oven mitt to take it out of the microwave since it will be very hot. Rinse and drain can of black beans. Add olive oil to a skillet over medium heat, add diced red onion, 1/2 can of black beans, diced red bell pepper, corn, and a dash of salt, pepper, garlic powder, chili powder and cook for 5 minutes stirring in between. Cut the sweet potato in half, scoop out some filling (optional), add bean mix inside, chopped cherry tomatoes, and top with mashed avocado.
