Inspired by the classic Girl Scout cookie, this Samoa Cookie Oatmeal features a healthy "caramel" sauce made from maple syrup and peanut butter, topped with coconut flakes and dark chocolate.

How to make: • For the caramel sauce, place a pot over medium heat, combine 2 tablespoons maple syrup and 2 tablespoons peanut butter, and stir. Let boil for a minute and then add 1/3 cup almond milk. Stir and let boil again if consistency isn’t thickened enough. • Optional: toast some coconut flakes in the toaster oven. • In a small bowl, combine 1/2 cup oats and 1/2 cup of almond milk, microwave for one minute. • Top oats with a bit more almond milk, a combination of coconut flakes, and toasted coconut flakes. • Drizzle with caramel sauce and top with dark chocolate.
