Guava + Cheese Empanadas

This recipe for flakey, crispy, and delicious guava and cheese empanadas is inspired by Puerto Rican grandmother's tradition of serving Goya guava, cheese, and crackers. Made easy with Goya empanada dough and queso quesadilla.

Preheat the oven to 400 F. Bring the Goya empanada dough to room temperature, then place on a cutting board. Add a piece of guava paste to the dough, a bit towards the top to give room for folding. Add Goya queso quesadilla, fold the empanada, and seal it by pressing the edges down with a fork. Complete this with the rest of the empanada dough. Grease a baking sheet with a bit of oil and add your empanadas on top. Crack an egg in a bowl and whisk, then brush over each empanada to help create a golden crust. Using a sharp knife, create a couple slits on the top so the guava can steam as it gets hot while cooking. Bake in the oven for 20-22 minutes or until golden brown. Let cool for 5 minutes before enjoying, as they can get hot!
