Chicken Milanese is a style of cooking that involves dredging thin slices of meat in eggs and bread crumbs then pan-frying them. It's super easy and cooks quickly, making it a great option for a quick dinner or meal prep. It can be enjoyed on a salad or even a sandwich, and can easily be made gluten-free.

Butterfly (cut in half horizontally) the chicken breasts. Wrap one piece of chicken at a time in wax paper or plastic wrap and pound thin using a meat mallet (or a rolling pin/heavy saucepan). Grab 3 separate bowls: crack eggs in one bowl and mix, flour in another, and breadcrumbs and seasonings mixed in the third. Dip each cutlet in flour first on both sides, then the egg mixture, and then in the panko breadcrumbs on both sides. Heat a skillet over medium-high heat and add a tablespoon of butter and a tablespoon of olive oil. Pan fry 2 pieces of chicken for 2-3 minutes on each side until they reach an internal temperature of 165°F. Serve over greens with cheese, lemon, and oil if desired.
