Shrimp Sushi Bowl with Spicy Mayo

An easy homemade sushi bowl recipe, perfect for when sushi cravings hit but sushi-grade fish is hard to find. This version uses white rice and regular shrimp, making it a convenient and delicious meal.

Bring a pot filled with 2/3 cup water to a boil, add rinsed rice, turn down to a simmer and cook for 15-17 minutes covered. Meanwhile, cut romaine lettuce, carrot, cucumber, and avocado. Add cooked rice and romaine to a bowl along with sliced veggies and defrosted edamame. Cook shrimp in a skillet over low-medium heat with olive oil and desired seasonings for 2-3 minutes per side. Cut shrimp into small pieces and add to the bowl. Combine 1 TBS vegan mayo and 1-2 tsp sriracha for spicy mayo. Drizzle spicy mayo on top along with sesame seeds and soy sauce if desired.
