You’re going to want this COCONUT SHRIMP as soon as possible! I absolutely love coconut shrimp! It’s super nostalgic as it used to be my great grandmother’s favorite dish to order out so I always think of her when I have it. I airfried these but you can pan fry them too! It’s usually served with a sweet sauce made of 2 ingredients: apricot spread and Thai sweet chili sauce. Honestly the Thai sweet chili sauce was good enough for me but if you don’t have both don’t sweat it! Serve over rice, greens or honestly no shame in dipping in ketchup. Happy Tuesday friends!

Combine flour, salt and pepper in a bowl. Combine panko and coconut in a second bowl. In a third bowl, beat the eggs. Dip each shrimp into the flour, then the eggs, then the panko coconut mixture. Set air fryer to 395°F and cook shrimp on each side for 3 minutes OR add oil to a large skillet and then add the shrimp, cook on each side for 2-3 minutes. Place on a paper towel lined plate. For the dipping sauce, mix apricot spread and Thai sweet chili sauce.
