A classic Italian Minestrone Soup made with a variety of vegetables and a tomato base, utilizing "ugly" produce from Imperfect Foods to reduce food waste. This recipe is designed to be flexible, allowing you to use whatever vegetables you have on hand.

In a large pot over medium heat, add olive oil, garlic and onion and sauté for about 5 minutes. Add carrots, celery and mushrooms and cook for an additional 5 minutes. Add broth, 2 cups of water, and can of tomatoes, bring to a boil, add spices, then simmer for 20-30 minutes. Bring soup back to a medium heat, add pasta and cook for 8-10 minutes. Stir in kale until slightly tender and serve!
