Zucchini Fritters (Latke Hybrid)

These ZUCCHINI FRITTERS are like a fritter latke hybrid but are a fun alternative now that Hanukah is around the corner! I love latkes SO much and wanted to see if I could put a veggie spin on it. These only require 4 main ingredients and some spices! I didn’t use potato but you can always try and add some to the mix.

Shred zucchini and onion into a large bowl. Add 1 tsp salt and let sit for 10 minutes. Squeeze most of the moisture out using a nut milk bag or paper towels. Add back to a bowl and mix in the flour, garlic powder, and additional salt and pepper. Add oil to a skillet over medium heat (grape seed oil for a higher smoke point, vegetable oil also works). Add 2 TBS of zucchini batter into your palm and form into a patty, flatten, then add to the skillet and cook for 2 minutes on each side until browned. Top with additional salt and scallions and serve with your favorite dipping sauce on the side, like sour cream.
