This basic Pad Thai is super simple and not to mention so delicious. The recipe simplifies the sauce, offering an option to use store-bought. Shrimp is added but can be substituted with tofu or omitted. The key to a great Pad Thai is the toppings, including peanuts, cilantro, and fresh lime juice. This recipe makes a big batch of about 3-4 servings.

1. In a small bowl, mix all the ingredients together for the pad thai sauce. 2. Bring a pot of water to a boil and cook the rice noodles for 4 minutes, then drain. 3. Add olive oil to a skillet over low-medium heat, add onion and minced garlic cloves, cook until fragrant for 2-3 minutes. 4. Add the sliced bell pepper and carrots to the skillet and sauté for 3-5 minutes until cooked. 5. Add the defrosted shrimp and cook for 2-3 minutes each side. 6. Add the noodles and sauce, bring down to a simmer and mix. 7. Add everything to a bowl, top with cilantro, lime and crushed peanuts.
