I know what you may be thinking: why in the world are you posting a picture that goes against your Instagram handle? 🤔 I always look to find healthier alternatives to not so healthy food so I wanted to tackle ramen! The key is to load up on veggies and healthy sources of protein ✔️ Don’t be intimidated! This is super easy just requires throwing a lot of things together 😊

In a large pot, sauté mushrooms and broccoli for 3-4 minutes over medium heat with olive oil. Pour in miso broth, bring to a low boil and then simmer for 5 minutes. Add carrots, Dijon, soy sauce, and 2 servings of egg noodles to the broth and let simmer for 3-4 minutes. Taste broth and add salt and garlic powder for additional flavor. In a separate pot, bring water to a boil, gently place in egg(s) and reduce to a low boil for 6 minutes then transfer to a bowl with ice. Serve ramen with soft boiled eggs and sesame seeds.
