Summer Corn and Avocado Salad

One of the best things about summer are versatile, easy, fresh summer salads that make the best side dish to any meal. This one features corn, avocado, grape tomatoes, lime, and basil.

Husk (remove the outer layer) of corn and cook it as desired whether it’s steaming it, boiling it, or grilling the corn! (The creator steamed theirs). If you don’t have access to fresh corn that’s okay! You can use frozen corn as well. Cut corn off the cob and add to a large bowl. Cut up the avocado into cubes and add to the bowl. Cut desired amount of grape tomatoes in half and add. Add the juice of the lime to the salad. Don’t forget a little bit of salt, toss salad, and adjust accordingly to how you like it. Top with basil.
