This NO BASIL SPINACH PESTO has become a dinner staple! It uses spinach instead of basil, making it easier to prepare without needing to buy fresh basil. Walnuts are used as a more affordable alternative to pine nuts. This pesto stores well in the fridge and can also be frozen.

In a food processor or blender, add spinach, garlic, walnuts, sea salt, and cracked pepper and blend until combined. Then, add the olive oil and lemon juice and blend until well combined. Adjust to taste, adding more lemon juice, olive oil, salt, or pepper as desired. Store in an airtight container in the fridge for up to 5 days.
