- Cut the ends off the red onion, then cut in half, peel, and cut into thin slices lengthwise root to tip - Place a pan over medium-high heat and add a bit of olive oil - Add the sliced red onions and sauté for about 5 minutes occasionally stirring in between, make sure they’re cooking in an even layer - Reduce the heat to medium and slowly add in some of the chicken broth while stirring - Let the onions absorb the liquid then gradually add more over the course of 5 minutes - Add in the chopped CA grown prunes and orange juice and cook until the liquid has absorbed, and everything is incorporated (likely for a couple more minutes) - Turn off the heat and let the mixture cool. Next, add the sautéed onions and prunes to a handheld blender and blend quickly until the mixture is somewhat smooth but it still has a bit of texture. If you need to, add a tablespoon of broth here to help everything blend - Add to a bowl and serve with your favorite charcuterie cheese and crackers
