- rinse quinoa well and add it to a pot along with the bone broth, bring to a boil, then cover and simmer for 10-15 minutes or until the bone broth has been absorbed - dice the cucumber and shred the carrots - prepare the dressing by adding tahini, soy sauce, rice vinegar, grated ginger and water to a container and shake or stir to combine - in two bowls, add the arugula, cooked quinoa, edamame, shredded carrots, sliced almonds and scallions - drizzle dressing over the salads, mix to combine and enjoy!
