If you can’t be bothered to make dinner you have to make this SUMMER SHEET PAN GNOCCHI 🍅🥒 I love sheet pan meals because you toss everything on and bake! This is perfect after a long day and doubles as meal prep for the week too 🙌 Made it a summer vibe with fresh zucchini and tomato and tossed with pesto 🌱 You don’t need to boil the gnocchi either and it’s ready in less than an hour!

Preheat oven to 425°F. Chop zucchini into coins then in half. Cut the chicken sausage into coins. On a baking sheet, add the gnocchi to one side, then the vegetables and chicken sausage. Drizzle with oil, add salt and pepper on top and give it a good mix (you can use a tong or your hands!). Bake for 25-30 minutes stirring halfway. Once out of the oven stir with some pesto and that’s it! Store leftovers in an airtight container for 4 days in the fridge and if you plan on using for meal prep, skip on adding the pesto until you reheat it. The pesto will brown which is fine but better fresh.
