This GLASS NOODLE VEGGIE STIR FRY came together in a pinch and ended up being one of my favorite meals at the moment! I have a theory that meals that come together last minute are the best and this proves it to be true 🙌

- chop up onion, bell pepper and mushrooms - boil water and add glass noodles and cook for 6-8 minutes - add the onion and bell peppers to a pan and sauté for a couple minutes then add in a minced garlic clove sautéing for another minute - add in the mushrooms and continue to sauté for another couple minutes - add spinach and the glass noodles to the pan along with the soy sauce and sesame oil and mix to combine, feel free to adjust flavors here - serve with salmon and sesame seeds and enjoy!
