Add equal parts oats and almond milk to a saucepan over low-medium heat and stir. Add the maple syrup and 1/2 tsp cinnamon and once it starts to bubble, lower to a simmer and cover for 3-5 minutes until the liquid has mostly absorbed. In a skillet, add the diced apple with the water over medium heat, cover for 3-5 minutes until the water has been absorbed. Add coconut oil or butter to help the apples get golden brown and add 1/2 tsp cinnamon and cooked until browned. Add oats to a bowl and top with the cooked apples then drizzle with almond butter and pumpkin seeds.
