A great idea for Meatless Monday or for vegetarians/vegans, this easy chickpea salad sandwich is quick to make and uses simple ingredients like a can of chickpeas.

1. Drain a can of chickpeas in the sink and rinse well. 2. Add chickpeas to a bowl and mash with the back of a fork until mostly mashed. 3. Add mayo, Dijon, chopped carrots, chopped celery, and salt and pepper to taste, mixing well. 4. Add the chickpea salad to a slice of bread along with tomatoes and lettuce to assemble your sandwich.
