Creamy Tuscan Chicken Dinner

You’re going to want to save this one skillet CREAMY TUSCAN CHICKEN dinner for later 🥘 This looks and tastes straight out of a restaurant but only requires 30 minutes and one pan! I don’t do well with tons of lactose so I used coconut cream but feel free to swap for heavy cream, I swear you don’t even taste a strong coconut flavor. Serve over pasta or a side of potatoes and veggies for a complete balanced dinner.

Season chicken with salt, pepper, and garlic powder. Heat a tablespoon of oil in a skillet over low-medium heat and cook the chicken for 5-6 minutes, then set aside. Add another tablespoon of oil and the minced garlic, cook for a minute, then add the sun dried tomatoes and mushrooms and heat until soft. Reduce heat to a simmer and add the milk and broth, stir occasionally and let thicken. Add the Parmesan cheese and Italian seasoning, then add the chicken back into the pan. Stir in the spinach until wilted.
