This TACO STUFFED SWEET POTATO will be your new fav easy dinner 🌮🍠I love any kind of stuffed sweet potato because they’re so easy to make! Instead of baking my sweet potatoes in the oven which takes 45+ minutes, I microwave mine in about 5 minutes

- dice half the onion and sauté in a skillet over medium heat with olive oil for a couple minutes until translucent - add the package of ground beef and break into smaller pieces, cook until it’s browned - drain the grease and add in the taco seasoning and salsa and mix until combined - wash and dry a sweet potato, pierce with a fork several times, and wrap in a damp paper towel. microwave for 5-7 minutes until soft - cut open the sweet potato, feel free to remove some filling if you like (optional) and add the taco meat and your toppings of choice
