in a saucepan over medium heat, add olive oil and onion, cook until translucent add garlic and ginger and cook for a minute add coconut milk, water and lentils and stir then add your spices: curry powder, turmeric, cumin and stir again reduce the heat to low, cover partially with a lid, and let simmer for 15 minutes serve with basmati rice and naan (tip: if you don’t want to wait a while for the rice to cook, I like @minutericeus basmati!)
