Nothing says Fri-yay like some HEALTHY COOKIE DOUGH ✨ This protein packed cookie dough is made with only 6 ingredients! The KEY is to remove the casing from the chickpeas, which is tedious but results in a creamy, cookie dough texture.

Drain a can of chickpeas and dry between paper towels back and forth to help remove most of the casing. Peel all casing off the chickpeas. Add chickpeas, peanut butter, maple syrup, vanilla and salt to a blender or food processor and blend until combined. Add to a bowl and stir in the chocolate chips.
