Shaved Brussel Sprout Salad

Rinse brussels sprouts and dry, then cut off the end of each. If using a knife, cut the brussels sprout in half then thinly slice each half or you can slice on a mandolin, but please be careful! Then make your dressing by adding olive oil, apple cider vinegar, Dijon mustard, lemon juice, maple syrup, and salt and pepper to a container and mix them to combined, feel free to adjust anything here. Cut a Honeycrisp apple into small dices. To a large bowl add the shaved brussels sprouts, diced apple, candied pecans, dried cranberries, and shave some Parmesan. Pour the dressing on top, give it a good mix until everything is combined and serve.
