Not to mention a healthy source of protein and overall delicious too 🙌🏻 They make for a great easy lunch or dinner option! Add oil to a pan over medium heat, once hot add the ground chicken and break into crumbles, cook for 3-5 minutes. Add the chopped onion and sauté for a couple minutes until it becomes translucent. Add the garlic, soy sauce, hoisin sauce, rice vinegar and sesame oil and stir to combine. Add a couple tablespoons of water to help the sauce form and let it all simmer for a couple minutes. Serve the mixture over lettuce cups and top with scallions.
