My new fun breakfast these days has been these MINI SWEET POTATO TOASTS 🥑🍠 I love sweet potatoes in any shape or form and these coins are my new favorite. I make these in the toaster oven! If you don’t have one you can roast them in the oven too. Topped it with my savory go-to’s but feel free to try a sweet option too 😋 They make for the best breakfast or a fun appetizer too! Wash and dry sweet potato well. Cut the sweet potato into coins. Place coins in the toaster oven at 400°F and toast on each side twice or until it starts to roast. Mash avocado on each sweet potato and top with lox and everything but the bagel seasoning.
