Preheat oven to 450 degrees Fahrenheit. Cut zucchini really thin, I used a mandolin. Spray a baking sheet with non stick cooking spray. Drizzle a tablespoon of olive oil over zucchini in a bowl. In another bowl, mix breadcrumbs and Parmesan and coat each zucchini chip in it. Place on baking sheet and cook for 20 minutes, flipping halfway. Meanwhile, add garlic powder, dill, parsley, lemon juice, and a bit of salt and pepper to Greek yogurt and mix.
