This is such an easy way to make a sushi inspired fun meal that requires no cooking! Especially if you use leftover rice or microwave rice 🙌 Get creative with the vegetables and fillings you use too ✨

- cut the ends off of the cucumber and then cut it in half - CAREFULLY, using a small knife, scoop out the center of the cucumber halves, watch your hands and hold the cucumber half towards the top so you don’t cut yourself - add rice to the center of each and pat down with the back of a spoon or knife - add the slices of vegetables as the filling - cut cucumber halves into slices creating your sushi pieces - mix mayo and sriracha to create a spicy mayo and drizzle over the cucumber sushi - top with sesame seeds and serve with soy sauce
