Greek Chicken Bowl with Homemade Tzatziki

This GREEK CHICKEN BOWL has all of my favorite flavors 🍅🥒 Any time I see Mediterranean flavors on a menu I’m always ready to order it which is why I made a delicious bow at home! I even made a homemade tzatziki sauce which was SO easy and flavorful. This is also very customizable, you can swap the chicken and tzatziki for chickpeas and hummus to make it plant based. Prepare brown rice over the stove or in the microwave. Season the chicken with salt, pepper, and some lemon juice (optional: marinade for a half hour for a stronger flavor). Add 1 TBS olive oil to a pan over medium-high heat, add chicken and cook on both sides for 4-5 minutes until cooked. Chop the cherry tomatoes in half, dice the cucumber, and cut chicken into slices. For the tzatziki sauce, add all ingredients (greek yogurt, lemon juice, chopped cucumber, minced garlic clove, dill, kosher salt, cracked pepper) to a mixing bowl and mix until combined, adjusting flavors to taste. Add rice to the base of a bowl, then add the cherry tomatoes, cucumber, chicken, feta, and olives. Drizzle tzatziki on top of the bowl.
