What better way to celebrate a snow day than some homemade HEALTHIER CHOCOLATE CHIP COOKIES 🍪 There’s just something about snow days and baking that make me so happy ☺️ These aren’t necessarily as “healthy” as veggies but use whole ingredients which I find are always better. I used coconut sugar and coconut oil but included regular substitutions too. Hope you have a happy Thursday and a happy snow day! ❄️

Preheat oven to 350°F. Add flour, baking soda, and salt to a large bowl and whisk to combine. In a separate bowl, add the coconut and cane sugar along with the softened coconut oil, mix with a hand mixer until fluffy. Add the vanilla and eggs and mix again. Slowly add the flour and mix one more time. Fold in the chocolate chips. Line a baking sheet with parchment paper and add 1 tablespoon size dough, creating 12 cookies. Bake for 9-11 minutes and let cool on the baking sheet for an additional 2-3 minutes.
