Beet Hummus

A creamy, delicious, and nutritious twist on regular hummus, made with chickpeas and beets.

Rinse and drain a can of chickpeas. Add chickpeas, beets, olive oil, and tahini to a food processor or high-powered blender and blend until combined. Add lemon juice from half the lemon, garlic cloves, and a good amount of salt and pepper. Taste as you go and add additional olive oil or salt if needed. Add to a bowl and top with feta or goat cheese (optional), mint, lemon zest, and salt and pepper.
