This Buddha bowl is a go-to easy dinner, consisting of a large bowl of greens, grains, and nourishing whole foods. It's plant-based but can include chicken. The best part is if you meal prep the ingredients, it takes hardly any time to throw together!

Roast potatoes and brussel sprouts in an oven until crispy. "Massage" kale with a pinch of olive oil to make it less bitter and easier to digest, then add to a bowl. Top with roasted brussels, potatoes, chickpeas, 1/2 sliced avocado, and a dressing made from sriracha and tahini.
