Celebrating Friday with this fiesta of a THAI BOWL 🌶 I can’t get enough of this it’s SO good! It reminds me of something I would order out too 🙌🏻 The best part is this peanut sauce which can go with anything! 🥜 If you’re unfamiliar with the ingredients, you can find rice vinegar in the international aisle of your grocery store and I use @traderjoes sesame oil! Both ingredients take it to the next level 👏🏻 I hope you have a happy Friday friends! ✨

Rinse brown rice and add to a pot with double the amount of water and salt, bring to a boil, then down to a simmer, cover and cook for 20-40 minutes depending on the packaging. Cut chicken breast into slices and marinate in a bowl with a little soy sauce and olive oil. Slice red pepper and sauté in a skillet over low-medium heat for 3-4 minutes and set aside. Add the chicken to the skillet with olive oil and cook on both sides for 4-5 minutes. Mix all ingredients for the sauce (peanut butter, soy sauce, rice vinegar, sesame oil, water, grated ginger) in a bowl or a blender until combined. Assemble the bowl by adding the rice first, then greens, then vegetables and chicken. Top with peanut sauce, scallion, cilantro and sesame seeds.
