Can’t get enough of these LEMON CASHEW ENERGY BITES 🍋 I created this recipe years ago but had to bring it back because it’s THAT good 😋 The picture doesn’t even do justice as to how delicious these taste. With only 6 ingredients too this simple snack will also be your new fav. I love making energy bites to snack on the go or in between meals at home. Gluten free, vegan and makes about 12 energy bites ✌🏻 Happy Friday y’all! 🕺🏼

What you need
tsp lemon zest

cup raw cashews

cup unsweetened coconut flakes

cup medjool dates

tbsp lemon juice

cup flax seed
Instructions
Soak dates in a bowl of warm water for 5 minutes; this makes it easier to blend them. Add cashews to a powerful blender or food processor and blend until they’re chopped. Add the rest of the ingredients and blend until it creates a dough; feel free to adjust and add more honey or lemon here. Roll the dough into tablespoon-sized balls and then roll into more coconut flakes. Store in an airtight container in the refrigerator for about a week.View original recipe
